It is Fall holiday party time and we are baking Granny Smith Apple Pies in the kitchen. Try this recipe for your next event. Perfect for a sweet new season!
Granny Smith Apple Pie
Flaky Pastry Pie Crust
Makes two 9 in. pie crusts
Ingredients:
2 1/2 c. all-purpose flour
1/2 tsp. salt
1 c. butter, chilled and diced
1/2 c. ice water
Directions:
Combine flour and salt in large bowl. Cut butter until mixture resembles coarse crumbs. Stir in ice water, a Tbs. at a time, until crust mixture forms a ball. Wrap dough in plastic wrap and refrigerate overnight. Sprinkle flour onto rolling surface. Roll dough out, then divide in 1/2. Roll each half to 1/4 of an in. thick and big enough to cover a 9 in. pie plate. Place crust in pie plate, pressing evenly into bottom and sides.
Granny Smith Apple Pie:
Ingredients:
pastry for two crusts
8 c. or 3 lbs. sliced, peeled Granny Smith Apples
3 Tbs. lemon juice
3/4 c. white sugar
1/4 brown sugar
1/4 c. all-purpose flour
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
2 Tbs. butter
1 egg yolk
2 Tbs. milk
Directions:
In a large bowl, toss sliced apples with lemon juice. Combine sugars, flour, cinnamon and nutmeg. Add to apples and toss well. Fill pastry lined 9 in. pie pan with apple mixture. Dot with butter. Place second crust on top of pie filling. Cut slits in top of crust for ventilation. Seal edges of crust with fork or hand. In small bowl, beat egg yolk and milk. Brush mixture over top crust. Bake at 425 degrees F for 15 min. Reduce heat to 350 degrees F and bake additional 40-45 min. or until crust is golden and filling is bubbly.
